Among the many cancellations and postponements that were caused by COVID in 2020, the loss of the American Association of Meat Processors annual convention was felt by small processors across the country. The AAMP Show has been more than a learning experience and trade show; it’s also a social event, where old friends gather together to share experiences, network and pass along tips and tricks to each other.
As life returns to normal in 2021, the AAMP Show has returned as well. This year’s event will take place on July 15-17 at the Omni Oklahoma City Hotel and Oklahoma City Convention Center. The 500,000-square-foot Convention Center opened this year and includes more than 200,000 square feet of exhibit space and 45,000 square feet of meeting space.
The educational agenda includes many seminars that will give attendees ideas on how to enter into new markets, improve their social media presence and adapt to federal regulations. Topics to be discussed include: processing raw frozen pet food, digital marketing, evaluating costs and value-added products.
More than 100 exhibitors will display their latest products, services and solutions on the trade show floor. (The Independent Processor booth is #147 – stop by and say hello!). There are exhibit hours each day of the event, for networking, education and sales opportunities.
One of the highlights of the AAMP Convention is the Annual Cured Meats Competition. Processors all across the country submit their best cured products, including hams, bacon, sausages, smoked beef, turkey and other specialties. This year’s featured class is Black Pepper Flavored Small Diameter Smoked & Cooked Sausage. On-site ACMC registration takes place on July 15 between 9:30 and 12:30. Along with the educational sessions and trade show floor, there are several events for catching up with fellow meat industry professionals. A pre-show bus tour, taking attendees to area processors and Oklahoma State University, is sold out. There is also a welcoming event at the National Cowboy & Western Heritage Museum and a closing banquet at the Omni Hotel. Both events require separate tickets.
